New ‘Launch’ Date

Hello again everyone! I know I said I wasn’t going to post anymore, but I have some exciting news! After much deliberation over the past week, I am planning on blogging again! However, I’m taking from April to the middle of August off to focus on school, repairing my relationship with my parents, and focusing on my weight loss. So mark your calendars for August 20, 2012, because that is when I will start blogging again!

I’ll still be blogging about the same things, but this also gives me time to come up with new topics, recipes, and to take transformation pictures. I will officially be starting my senior year of college, moving into my first adult apartment, so the blog will have a little bit more of a serious tone. I’ve already come up with a couple recipes, I’m so excited!

Thank you all for understanding and supporting me on this. I hope I don’t let you down and I can’t wait till August 20!

It’s Not a Good-bye

To all of my readers:

I have enjoyed writing for all of you for the past ten months. Though my posting has been rather infrequent, I enjoy blogging. However, due to extenuating circumstances, I have decided to stop blogging for a while. This blog hurt someone I love very much, more than I ever thought it would, my mom. We have been repairing our relationship for two months now, and over those two months, this blog has been harder and harder to maintain. I cannot bring myself to bring this blog up to my mom because of how it hurt her so. While I work on rebuilding my relationship with my parents, I hope you all enjoy life. I hope to start blogging again sometime soon. It may not be under this domain, or I may pick it up again on here in the near future. For now, I need to focus on my family, college, and my relationship with Robbie. I hope you all understand. I don’t know how vast my readership is, even though I have a feeling it is quite small. I care for all of you because you reading maintained me for many, many months.

It’s not a goodbye. I’ll be back soon.

Goodies from My Parents

One thing that I love about being back in contact with my parents is how they help me buy some of the healthy food that I wouldn’t necessarily be able to afford. Every week they come up with something that I may need or they think I would like. When they come up, they also tend to take me and Robbie to dinner. We’ve been to Applebees, Lover’s Eggroll, and Fuzzy’s. Needless to say, Robbie and I are enjoying not having to pay for eating out.

There are a few things that  my mom makes for me that I simply adore. One is the confetti chicken salad. Words can’t describe what it tastes like, other than creamy goodness. And to think, there is little to no mayo in it! It has jalapeno, red, yellow, and orange bell pepper, onion, and a mixture of greek yogurt. I’ve missed this so much. It’s great on lavash bread, on toasted bread, or just with Wheat Thins. So good. I think I’m going to ask my mom to make me some this weekend, I’m officially salivating thinking about it.

Then there are the banana squares. My mom started making these about three, four years ago when we both set out to lose weight. She makes them with garbanzo bean flour. You can buy it at Sprouts, Whole Foods, or Central Market. And something tells me you can probably find it at Trader Joes.

Also, my mom makes these amazing cinnamon chips with the lavash bread. I don’t know what she does but they are so good! Especially dipped in Greek yogurt with a little stevia mixed in.

A picture of some of the goods. Most of this was brought to me last week. In clockwise order: Madras Lentil Chili, Premier Nutrition Chocolate Protein shake, banana squares, Parmesan Garlic Pop Chips, Veggie straws, Joseph’s Lavash, cinnamon chips, Laughing Cow cheese, beef jerky, and chia seeds.

I left out my favorite, though they weren’t brought to me last week. I’ve been keeping them in the freezer so I have a quick stash when I run out of groceries, and so that way they won’t spoil in the fridge.

Most of this is bought in bulk at Costco. Those protein shakes are seriously the bomb! They taste amazing and don’t have a chalky taste at all.

Bought at Costco: Madras Lentil Chili, Premier Nutrition Chocolate Protein Shake, Parmesan Garlic Pop Chips, Veggie Straws, Laughing Cow Cheese, Chia Seeds, and Amylu Chicken Burgers.

Everything else is either bought at Walmart or made by my mom. Needless to say my diet is being aided by this stash. I can eat healthy without fear of breaking mine and Robbie’s budget.

For instance, this weekend my parents are bringing me a big tub of Greek Yogurt from Costco, Hidden Valley Ranch and Fiesta Ranch packets, Glade plugin, and now adding to the list the Confetti Chicken Salad. Hopefully they include some avocados so I can make them some of my guacamole, which they have never had before..if Robbie doesn’t eat it all though. And I can use this molcajete that Terry bought me over Christmas break.

Angry Girlfriend Taco Pie

I come to you all after a long hiatus with a new recipe! I created this tonight after me and Robbie had a fight. I started watching Chopped on the Food Network to calm my self down, but all it did was had me itching to get in the kitchen. After two back to back midterms today , the last thing I wanted to come back to was a fight. So this dinner was made purely out of anger. Not only is it delicious, it was made ‘angry’ with the spiciness of the dish.

I even made a message saying “I’m sorry” on the pie when done with sliced onions. Sadly, we dug into the pie without a picture of that.

Angry Girlfriend Taco Pie (serves 4)

(pie)

1/2 pound of ground turkey

3 tbsp taco seasoning

2 Joseph’s Lavash

5 slices of fat-free cheddar cheese

1 can corn

1 can Rotel

3 wedges of Swiss Laughing Cow cheese

(sauce)

1/4 cup of light Hellman’s Mayo

1/4 cup of fat-free ranch salad dressing

1 tsp milk

2 tbsp taco seasoning

1 tbsp chili powder

 

Sauce:

Combine the mayo, salad dressing, and milk. Stir to combine. Mix together the taco seasoning and chili powder slowly, to insure that it all gets incorporated. Chill in the refrigerator until ready to put on the pie.

 

Pie:

Preheat oven to 350 degrees. Brown the ground turkey in a pan on medium-high and break apart. Pour in the can of Rotel with liquid and stir. Drain the can of corn and pour into pan. Measure out the taco seasoning and mix together. Once turkey is browned, turn heat down to low and drain of any excess liquid. Using the pie pan as a guide, cut out the two shapes needed out of the lavash. Lay one in the bottom and cover with the fat-free cheddar cheese. Once the oven is preheated, spoon the turkey mixture into the pie pan. Tear apart the laughing cow cheese and place on top of the turkey mixture. Cover with the other piece of lavash. Spread sauce evenly over the top and place in the oven for 20-25 minutes, until the top of the pie is bubbly and brown. Let rest for five minutes before serving. Top with salsa, guacamole, or greek yogurt if desired.

School and Life Overload

Hello everyone! I’m so deeply sorry for not posting over the past week. Things are starting to get crazy over here with midterms, and last weekend I went out of town, so that is why I didn’t post for almost a week. I promise to be more consistent and to warn you guys when I may not be posting. I know I didn’t finish my series about the Cowtown Marathon, so I will be finishing that tomorrow once I get out of my World History midterm.

I’ve been doing Tina’s workout plan for me, and although I haven’t lost any weight, I have lost some inches! That feels great, but I did have a moment of self-doubt yesterday and I broke down crying after my aerobics class. We did nothing but stretch all period and part of the reason I’m taking that class is to help me lose weight, and to get in a workout on Tuesdays and Thursdays if I don’t have the time to do a full one, like I did yesterday. I gained 13 pounds in about two weeks and I do not feel good at all about it. I hate myself for doing that. But then, part of it was A) being unable to workout due to my bad OBGYN appointment B) splurging and getting Chili’s Curbside To-Go, C) Eating out with my parents, D) having food made by my parents) and C) being out of town.

So what am I going to do? Do a complete 360 on my eating habits and get them in check. Also, stock up on a lot of hot tea to help me from snacking all the time. Also, choose wisely at restaurants when I do go out to eat. And stay away from chips and salsa (trigger food!!) at Mexican restaurants. I have my work cut out for me. I may not make my goal of July 19 to have all my weight off, but I will have most of it off.

I’m also going to start running when I only have cardio days on my plan, which won’t be that often. I can successfully run for two minutes on a treadmill now so, its working so far. But then I have been getting weird pains in my shins so I think that may be from the running. I’m keeping it in check though.

This week I made kale chips (success!) and my first green monster (success!). I can’t believe I was missing out on so much! I love both now, though I think my kale chips could have turned out less crumbly. Also, I really don’t think they go that great with ketchup.

Robbie and I have now cut out our eating out budget. This way, I’m not tempted to eat bad food, and I can use that money to buy all the extra produce I will be eating.

We did not celebrate Valentine’s Day, but just spent it enjoying each others company while studying for midterms. So what we didn’t celebrate? It’s not like we don’t love each other the other 365 days of the year. We just demonstrate it everyday. But we are celebrating our ‘one month dating anniversary’ on the 29th. Why? Because when he asked me out January 29, 2010, there was no February 29 that year. So we’re going to Applebees, courtesy of my parents who gave us a gift card from there for Valentines

I have to get back to studying for my exam, but I’ll be back soon. I miss blogging, and I hope AHGL will continue to grow. We’ve actually haven’t been doing that great in stats (I know part of it is because I haven’t posted in a week) but also some days that I do post we barely get any views at all. So please, spread the word about AHGL. Tell your mom, best friend, co-worker, anyone! I want to get the message out that you can eat healthy and gourmet foods while trying to lose weight.

The Cowtown Marathon Series: Best Shopping in Fort Worth

Regardless of where you travel, every tourist wants to scope out the local shops, right? Well today I’ll be dissecting the best shopping, food and clothes that Fort Worth offers.

Cowtown Marathon Series: Best Eats in Fort Worth

You’re in Texas, the land of Tex-Mex and delicious barbecue and you want an amazing meal that you can tell all of your friends about. Well then you’ve come to the right place! In today’s post, I will be dividing up restaurants into categories such as Fine Dining, Mexican, Barbecue, etc, etc. I will warn you, some restaurants may be off the beaten path, but I will tell you that your taste buds will not be disappointed. In Downtown Fort Worth, you will find some of the best restaurants in the DFW area. These are of course, are on the pricier end of the scale, but after hearing rave reviews about them, and even one of them being featured on the Food Network, I can without a doubt recommend these to you.

In just a short two weeks, the Cowtown Marathon will be in full swing in Fort Worth. I grew up hearing about this marathon and knowing people who ran it. I’ve never had anything to do with the Marathon, but this year I thought I would. Seeing as I am a native Fort Worthian, I thought I would write a series for the Cowtown runners. Restarting Workouts

I know what you’re thinking, I’ve started my workout plan. So why am I restarting my workouts? Well I had an interesting week all starting Tuesday morning.

Tuesday morning at 10:30 I had an OBGYN appointment in Fort Worth. The OBGYN I am now seeing is my mom’s, so therefore he was supposed to deliver me 20-something years ago. I was really, really nervous about the appointment, and when the examination began, I tensed up a lot. It hurt a lot more than it should have.

When Robbie and I got back to campus later that afternoon I wasn’t feeling well at all. I was cramping badly and felt sick. I went to aerobics but I could barely move, so the instructor gave me permission to leave. She also told me due to my appointment and how bad I was feeling that it would be a good idea to not workout for a couple days. I’ve also had some body liquid problems since Tuesday and was told it would be a good idea to take it easy and keep my feet up. So Robbie’s been taking care of meals this week, and the Taco Soup helped us have left overs for a couple days.

Due to all the problems I’ve been having, especially when it comes to levels of tiredness, Robbie won’t even let me do exercise bike, which I have in my room. I feel so lazy and weird. I want to work out, I need to work out. But it’s better than hurting myself even more.

I talked to Tina and she agreed that it was best for me to not exercise, and we did work out that I am going to restart Week 1 effective tomorrow. At least I will get a chance to correct the exercises that I did wrong last week before I get too far.

But I did have a good week besides that. Only taking 12 hours of classes means I’m caught up on all my classes pretty easily. However I do have my first big assignment in my Children’s Literature class.

Today I am going to the ol’ Fdub (Fort Worth) to spend the afternoon/evening with my parents with Robbie. We have plans to go to Costco, get my violin restrung, go shopping for a gift for Baby James (Robbie’s nephew that was born on Thursday night!!!), and eat and watch Schindler’s List.

This One’s a Doozie

Yesterday I started on the 24 week workout plan through Tina’s blog, and believe me, it was a doozie! I’ve never felt this exhausted in a workout before. I knew I needed some really good fuel so I fixed myself a big lunch before I went off to class.

At the store I bought some salmon burgers, so I decided to incorporate that into my lunch. The only thing disappointing about them is their size, they are really small. So I decided to make a monster salad to fill the void. I used baby carrots, cherry tomatoes, onion, and green bell pepper in addition to some salad mix and topped it with parmesan cheese, some stir-fry crunchies, and balsamic vinaigrette. I loved how it felt outside so I decided to eat my lunch on the patio that overlooks Phase 8 at UTD. Unfortunately, it wasn’t very peaceful due to mowing, construction, among other things. But I enjoyed the weather, as I may not be able to eat out there due to the weather very often.

Once finished, I decided to get a head start on dinner since I knew the afternoon would be full of class, workout, dinner, and class again. I browned some ground turkey and put it in a freezer bag into the freezer so I could make soup really quickly when I got out of workout. After my 2:30 class I ran to the gym with Robbie and completed my first workout on the plan! I did 20 minutes of treadmill at a pace of 3.5 mi/h and six different sets of weights for an arm workout using an 8 pound weight. This was such a hard workout, I know this is going to work wonders on my body. I realized I didn’t do some of the arm exercises correctly, but I will correct them by the next time I do the workout.

After workout I immediately ran back to my apartment and started making dinner- Taco Soup! It’s so easy to make, and very nutritious too. I had this for the first time at Robbie’s 21st birthday party and fell in love with the simplicity.

Taco Soup- serves 6-8

1 lb ground turkey

2 8 oz cans corn, drained

2 8 oz cans kidney beans, drained

1 16 oz can crushed tomatoes

1 package taco seasoning

1 package dry ranch dressing

2 cups water

Brown the ground turkey in a skillet, sprinkle with salt while cooking. Once browned, drain away fat and transfer to large pot and pour in. Add in the corn, beans, and tomatoes. Stir together and add in the water and both packages of seasoning. Stir again and set to a medium-high heat and heat through until simmering. Serve over whole wheat tortilla chips if desired and top with low-fat sour cream (or Greek yogurt) and fat-free cheese.

I halved this recipe for me and Robbie and didn’t put in the beans, and it was still delicious. I have to get going- OBGYN appointment in a few hours!
